Knowing this, I have made it my mission to learn the art of cheesecake making. I don't do it often, only on his birthday and Valentine's Day. Though, I have a feeling I will be adding our wedding anniversary to the list.
I made a Mocha Truffle Cheesecake on Sunday, and oh was it fabulous!

I deviated from the recipe a bit. Instead of doing a whipped cream topping, I made a chocolate ganache and drizzled doused the top with it. There were two reasons for the change.
The first was that I wasn't sure how long it would take to eat the cake. Ganache saves better in the fridge. Second, Mike and I are HUGE chocolate fans, and I was craving a death-by-chocolate experience. It exceeded all expectations.
